4 sirloin steaks (~2 lbs, 1/2" thick)
2 Tbs fresh chives
Ground mustard
2 Tbs butter
2 Tbs olive oil
2 Tbs lemon juice
1 Tbs Worcestershire sauce
1 tsp ground black pepper
1/4 C butter
1/2 tsp salt
1/4 C brandy, warmed
2 Tbs chopped parsley

Directions:
Directions:
Pound steaks to 1/4" thickness with mallet. Sprinkle each with salt and 1/4 tsp ground mustard. Pound into meat. Drizzle 1 Tbs olive oil onto steaks.Sprinkle with 1/4 tsp pepper. Press oil and pepper into steaks with the back of a spoon.

Melt butter in large skillet. Stir in salt and chives. Saute 1 minute. Cook steaks, oil side down, 2 minutes.

Rub remaining oil and pepper into 2nd side of meat before turning. Turn, saute 2 minutes more.
Transfer to warm platter.

Add remaining ingredients to pan juices. Blend well and heat. Ignite. Pour over steaks. Sprinkle with 2 Tbs chopped parsley.
