"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
2 C crushed Strawberries (4 C whole strawberries)
4 C Sugar
1 box Sure-Jell (original)
¾ C Water

Directions:
Directions:
First of all I use only a glass or plastic bowl and mix with a plastic or wooden spoon

Mix the crushed strawberries with all the sugar, let sit for 10 minutes stirring 2 or 3 times. Once this is done, in a small kettle mix the sure-jell with the 3/4 C cold water, bring to a boil, boil 1 minute stirring constantly. Immediately pour into strawberry mixture, stirring for 3 minutes. Pour into containers (I use 6 oz. glass jelly/jam jars), let stand on the counter for 24 hours then freeze. Make 6 jars.

Personal Notes:
Personal Notes:
I have red currants and use the same recipe plus 1 1/2 tsp. lemon juice. If I don't have quite enough to have 2 cups prepared fruit I add water to make the 2 cups.
