2 8" frozen deep dish pastry shells
9 oz shredded Jack cheese
3 eggs, slightly beaten
1 lb ground sausage
2 cloves minced garlic
1/3 C chopped scallions
10 oz frozen chopped spinach, cooked and drained
1 1/2 C half and half
3 Tbs grated Parmesan cheese
12 oz crumbed bacon
3/4 C herbed seasoned stuffing mix

Heat oven to 400º. Let pie shells thaw (~10 minutes). Do NOT prick shell. Bake shells 7 minutes.
Remove from oven, set aside. Reduce oven to 375º.

In medium skillet, cook sausage, scallions and garlic over medium-high heat until sausage is done, stirring occasionally. Drain sausage mixture. Stir in spinach and stuffing. Sprinkle Jack cheese into pie shell, then cover with sausage mixture.

In medium bowl, combine eggs and half and half with whisk until mixed well but not frothy. Pour egg mixture over sausage mixture.

Bake 30 minutes. Sprinkle with Parmesan cheese and paprika. Bake another 15 minutes or until knife comes out clean.

Let stand 10 minutes before serving.
