Midddle Eastern Squash Recipe

4 large acorn squash (1 1/2 lb each)
1 lb lean ground beef
1 C chopped onion
8 oz tomato sauce
1 1/2 tsp sugar
1 1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp pepper
1/2 C seedless raisins
1 1/2 C cooked brown rice
4 oz shredded Jack cheese

Preheat oven to 475º. Cut squash in half length-wise. Remove seeds and fibers. Place squash cut-side down onto greased shallow baking dish. Bake 45 minutes.

In large skillet, over medium high heat, cook ground beef and onion, stirring occasionally, until meat is browned and onion is tender. Remove skillet from heat; drain off fat. Stir in remaining ingredients except rice and cheese. Simmer 5 minutes, stirring occasionally. Remove from heat; stir in rice and cheese.

Turn cooked squash cut-side up, and season with salt and pepper. Fill squash with meat mixture. Bake 30-45 minutes or until meat is heated through.
