Stuffed Manicotti Recipe

1 lb lean ground beef
3 boxes of stuff-a-roni
1/2 C chopped onion
1 pkg frozen chopped spinach, thawed and drained
1 clove garlic, minced
2 tsp salt
6 Tbs Parmesan cheese
2 tsp paprika
4 15 oz cans of marinara sauce
1/4 tsp pepper
3-4 finely chopped mushrooms
6 oz tomato paste
1 C water
1 1/2 C cooked rice
Italian spices (as desired)
2 eggs, beaten

Saute onion and garlic, remove from pan. Brown meat, drain.

Mix all ingredients except sauce and spices. Stuff into shells (not too tight).

Arrange in single layer in baking dish (leave room between each shell for expansion). Cover with sauce and spices.

Add 1 to 1 1/2 C water. Cover entire dish with foil and bake in 375 oven for 1 to 1 1/4 hours.
