2 very ripe bananas
1 ⅓ cups all-purpose flour
¾ tsp. salt
½ tsp. baking soda
¼ tsp. baking powder
5 Tbsp. unsalted butter, softened
⅔ cup sugar
2 eggs
½ cup chopped walnuts or pecans

1. Preheat the oven to 350º. Grease an 8 ½ x 4 ½-inch (6 cup) loaf pan with butter or cooking spray.

2. Peel bananas and mash well. You'll need 1 cup mashed.

3. Whisk together flour, salt, baking soda, and baking powder.

4. In a large bowl, beat the butter and sugar until well-blended.

5. Beat the flour mixture into the wet ingredients until blended. Gradually beat in eggs. Fold in mashed bananas and nuts with a wooden spoon or spatula.

6. Scrape the batter into the pan and spread evenly. Bake until a toothpick inserted in the center comes out clean (50-60 minutes). Let cool in the pan for 5-10 minutes, then remove onto a rack to cool completely.

The bananas should be overripe to the point that they're brown and no longer look appetizing. You can store overripe bananas in the freezer until you're ready to bake.
