1 lb. Spicy Ground Pork Sausage
2 large. Chicken Breasts
2 4 oz. Cans Mild Green Chiles
2 qt. Cans Chicken Stock
½ cup Veg. Oil
1 cup flour

Directions:
Directions:
1.Add the Veg. Oil and Flour together for a Rue in a large soup kettle. Cook until a brown color stirring constantly. If it burns get rid of it.
2. Add the Chicken Stock and Green Chiles juice and all.
3. Fry the Pork Sausage until cooked thru. I like to add a package (about a table spoon full) of Red Pepper Flakes to the Pork it seems like it is never spicy enough. Add to the kettle.
4. Cut Chicken Breast into small squares and fry with a little oil in a pan. I add a little Cajun Seasoning just for flavoring the Chicken. Add to the kettle.
5. Simmer for an hour or two and ready to eat. But always better the next day

We like to eat with Frito Lay Corn Chip Scoops. Always good on a cold windy day
