2 tbsp butter
1 tbsp flour
1 cup whole milk
1 cup heavy cream
2 oz grated mild cheddar cheese
2 oz grated monterey jack
2 oz grate Oaxaca
2 oz grate Asadero
1 tbsp minced pickled jalapenos
1 tbsp pickled jalapeno juice
2 tbsp pico de gallo

Directions:
Directions:
Melt butter in sauce pan over medium heat; add flour and whisk until smooth and toasted, 5 minutes. Whisk in milk and cream; bring to a boil. Add cheese whisking until melted. Stir in a pinch each of cayenne and cumin, then add jalapeņos, juice, and pico de gallo, remove from heat and keep warm.
