3 pounds of russet potatoes, peeled and sliced (easier in food processor)
1 onion, sliced thin
1 stick of butter or margarine
2 cans of Spam, sliced about 1/4" thick
Salt & Pepper
2 can Campbells cream of mushroom (grandmas orignial)

OR

2 can Campbells cheddar Cheese soup (kids favorite)

Preheat oven to 375º. Spray a 9x13 dish with Pam and then layer as below:
thin layer of 1/3 of the potaoes
thin layer of 1/2 the onion
layer of one can of spam
butter, salt and pepper
Repeat the layers again and end with one last layer of potatoes.
Mix together two cans of cream of mushroom (OR cheddar cheese) a half a can of water and mix well. Pour this over the casserole and cover with foil. Bake for about 90 minutes until fork goes through the middle of the casserole easily. Remove foil and let cook another 15 minutes longer. Very HOT, be careful.
