Meatloaf

1.5 lbs of ground beef
1 small onion, diced
1 green pepper, diced
salt
pepper
2 eggs
1 C (or so) italian bread crumbs
1 small can tomato sauce
Directions:
Directions:
1. Preheat oven 350º
2. Combine all ingredients in a baking pan. (the amount of bread crumbs depend on the wetness of the loaf)
3. Form a loaf
4. Bake 15 minutes
 

Meatloaf Sauce
Ingredients:

2 T vinegar
2 T brown sugar (packed)
Mustard
ketchup
Directions:
Directions:
1. Whisk the ingredients-adding enough ketchup to make 2 cups
2. Pour over browned meat loaf
3. Continue to bake for 45 minutes.

This is Uncle Rick's mom meatloaf. Delicious both hot with mashed potatoes or cold sliced for meatloaf sandwiches.
