1 cup GF all purpose baking flour
1/2 c oat flour or Quick oats
1/2 c buckwheat flour (or coconut flour)
1/3 c sugar (coconut palm sugar, or sugar substitute)
2 tsps baking powder
1/2 tsp baking soda
pinch of salt
rind of one lemon
1 egg
6 tbsps softened butter
1-2 tsps vanilla
1/4 cup plain or vanilla yogurt (coconut works well)
coconut or almond milk
1-2 cups raspberries (frozen are OK)
Optional:
Icing sugar and lemon juice for a glaze, or icing sugar to sprinkle on top

Preheat oven to 400 degrees
Cover cookie sheet with parchment paper

1. In med/large mixing bowl, mix flour, baking soda, baking powder, salt
2. Mix in butter with a fork
3. Add lemon rind
4. In a glass measuring cup, mix egg, yogurt, vanilla and enough milk to make 2/3 cup
5. Add to dry ingredients and mix
6. Add raspberries
7. Using a large spoon, drop dough on cookie sheet
8. Bake for 20 minutes or until toothpick inserted comes out clean
9. Brush on glaze or sprinkle icing sugar if wanted

These are very good! Light, fluffy but pretty healthy... They are my favourite scone now!
