½ cup brown sugar, firmly packed
⅓ cup all purpose flour
¼ cup butter, melted
1 tsp. cinnamon

Muffins:
1½ cups brown sugar, firmly packed
⅔ cup vegetable oil
1 egg
1½ tsp. vanilla
2½ cups all purpose flour
¼ tsp. salt
1 tsp. baking soda
1 cup buttermilk
2 cups Granny Smith apples, peeled and diced
1 tsp. cinnamon

Topping:
Toss all topping ingredients in a bowl till crumbly and set aside.

Muffins:
Whisk together brown sugar, oil, egg and vanilla until smooth. In a separate bowl sift together flour, baking soda and salt. Mix together wet and dry ingredients alternately with buttermilk. Fold in apples until just combined. Spoon into greased or lined muffin tins ¾ full. Sprinkle topping over evenly. Bake 350ºF oven for 25 - 30 minutes until golden brown and top springs back.
