When I cook collared greens, I never really measure anything out, I just kind of cook. I start with a cast iron skillet, put some oil and chopped white onions in there, maybe a little bit of garlic (or a lot), and let the smell fill the room. Once the onions are soft, and the garlic is smelly I add chopped greens right into the pan, filling it up. I let the greens sear for about a minute, then I add about 1 cup of vegetable broth, enough to get all the greens wet. Bring to a boil and then let simmer on mid low for about 12 minutes. season as desired (I like to add a lot of spice, cayenne pepper, hot sauce, the works. I put some chipotle peppers with them the other day and they were to die for) Serve over rice, with chopsticks.
