1 pizza dough
1 boneless, skinless chicken breast
1 oz tequila
1 tsp BBQ rub (I like Dizzy Pig)
1/2 cup red onion, sliced thin
1/2 cup Jalapeno, sliced thin
1/4 cup cilantro, shredded
1 cup Smoked Gouda cheese, shredded
1 cup sharp cheddar cheese, shredded
1/4 cup Parmesan cheese, graded
1/2 cup Barbecue sauce (I use Sweet Baby Rays)

Let pizza dough rise in warm room for 1-2 hours.

Cut chicken breast into thin slices about 1 1/2 inches long. Add chicken to heated cast iron pan (medium high heat) and cook until done.

Preheat grill on high direct heat. Have all of your toppings on a tray close to the grill. Open grill top and stretch dough as large as you can make it. Close top for 2 minutes or until the dough bottom is slightly brown.

Flip dough and turn down heat. Add BBQ sauce, chicken, red onion, Jalapeno, cilantro, then cheese(in that order) to cover dough. Close top until cheese has melted and bottom is slightly brown. Transfer to cutting board and serve immediately.
