1 lb Chicken
2 T soy sauce
1 onion
1 T Chilli Garlic sauce, or chiles and garlic
Chili powder
1/2 cup Chopped apricots
a bit of leftover tomato sauce, or some tomato paste and water

Directions:
Directions:
Finely chop up chicken and marinate in soy sauce. Saute onion in some bacon grease! Add chili garlic sauce and chili powder and mix well into the onions. Add chopped apricots and chicken with soy, trying to brown the chicken as much as possible. Add about 1/4 cup of tomato Sauce and simmer down with the apricots, adding water to keep simmering, but cooking until it has a nice thick chicken curry consistency.
Serve this as a taco filling, or with rice. It had a nice almost Chicken Tikka flavor and you could also add garam masala.

All the rain in Kansas this summer and no late freeze has made it a bumper year for fruit! Our neighbors, the Dvoraks, have about 5 apricot trees that bear fruit about every 5-10 years and they don't like to cook! So in exchange for a little jam, we have picked and picked, making apricot jam, apricot marmalade, and as many trays of dried apricots as we can. They are a bit tougher than the soft store-bought kind, but the flavor is intense. My favorite way to use the dried apricots is to add them to savory sauces until they soften.
