Tartar Sauce
3/4 cup mayonnaise
3 tablespoons finely chopped dill pickles
plus 1 teaspoon brine
1 small shallot, minced
1 tablespoon capers, rinsed and chopped fine
1/4 teaspoon pepper

Burgers:
1 cup panko bread crumbs
1 1/4 pound peeled and deveined large shrimp (w6 to 30 per pound) with tails removed)
2 tablespoons mayonnaise
1/3 teaspoon pepper
1/8 teaspoon salt
1/8 teapoons cayenne pepper
3 scallions chopped fine
3 tablespoons vegetable oil
hamburger buns
bibb lettuce

For the tartar sauce, Combine all ingredients in a bowl and refrigerate until needed.

For burgers: Pulse panko in a food processor until finely ground, about 15 pulses: transfer to a shallow dish. Place one-third of shrimp (1 cup), mayonnaise, pepper, salt, cayenne, and old bay seasoning in now empty processor and pulse until shrimp are finely chopped. Add remaining two-thirds of shrimp to the mixture in processor and pulse until coarsely chopped, scraping sides of the bowl as needed. Transfer shrimp to bowl and stir in scallions.

Divide shrimp mixture into four or five patties and dredge in panko, pressing lightly to adhere.

Heat oil in a nonstick skillet over medium heat and place patties in the pan, cooking until golden brown on the first side, and then turn.

Spread tartar sauce on buns, add shrimp burger, bibb lettuce, and enjoy.

When I travel, I remember details. Tim is always amazed I can remember specific situations and even details of meals from years ago. I was in Custer with a friend, and while entertaining her, decided to try these Weight Watchers shrimp burgers that sounded intriguing. They are decadent and delicious and "diet food" ...what? These are delicious and will always remind me of a rainy night in Custer.
