1 organic egg
6 packets organic Sweetleaf stevia
1 tbsp. organic vanilla
⅓ c. organic coconut oil or ghee
3 small or 2 medium zucchini, chopped

1 tsp. baking soda
1 tsp. baking powder
1 - 3 tbsp. organic ceylon cinnamon
¾ c. organic shredded coconut
1½ c. organic ground flax
¾ c. extra dark chocolate Guittard baking chips
natural muffin cups

Directions:
Directions:
Preheat oven to 350º. Using a Vitamix, mix first five ingredients. Add baking soda, baking powder, cinnamon and mix again. Add shredded coconut and flax, mix. Add chocolate chips and mix by hand with a wooden spoon. Drop batter evenly into 12 muffin cups. Bake for 30 minutes or until middle is cooked.

Personal Notes:
These are very low sugar (only from the chocolate chips), high in good fats, and mostly organic. You can get most ingredients at Natural Grocers, and I get the chocolate chips at Target. I buy the ceylon cinnamon in bulk from Amazon, and I use 3 tablespoons in mine. If you are not using the ceylon, I would use less. You can substitute banana for the zucchini if you do not have a Vitamix.
