FOR SALAD
1 head lettuce, chopped
1 cup bell pepper, chopped
1/4 cup fresh cilantro
1 can black beans, rinsed and drained
1/2 cup red onion, chopped
1 can corn, rinsed and drained
1/4 cup scallions
3/4 cup tomato, chopped


FOR DRESSING
1 medium-large Avocado
1 clove garlic
1/4 cup olive oil
1 tablespoon fresh cilantro
1 lime, juiced
1/2 teaspoon salt
1/2 teaspoon pepper

Directions:

1) Add all dressing ingredients into blender and blend until smooth
2) In a large bowl combine all salad ingredients
3) Top with dressing and toss to coat
