1 C. water
1/2 C. butter or margarine
1 C. flour
1/2 tsp. salt
4 eggs, room temp.

Directions:
Directions:
Heat water and butter to a rolling boil in saucepan. Stir in flour and salt. Stir vigorously over low heat until mixture forms a ball, about 1 minute, Remove from heat. Cool for 5 minutes. Add eggs, one at a time, beating vigorously after each addition until mixture is smooth and glossy. Drop by teaspoonfuls on greased baking sheets. Bake at 400 for 30 minutes, or until, puffed, golden brown, and dry. Cool. Cut off tops with sharp knife. Scoop out soft dough. May make a day ahead or freeze; reheat in 325 oven to recrisp about 5 minutes. Fill with desired filling, I like to fill mine with chicken salad (page 135), cut really fine. Makes 36 to 48. An elegant party "sandwich."
TIP: May make large Cream Puffs and fill with vanilla pudding for a good dessert (or make Mini-Puffs and fill with pudding).
