2 1/2 C. flour
2 tsp. baking soda
3/4 tsp. salt (my addition)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger (my addition)
1-31/2 oz. pkg. lemon instant pudding
1-3/1/2 oz. pkg. butterscotch instant pudding
5 eggs
1 1/2 C. sugar
1 1/2 C. cooking oil
1- 1lb. can pumpkin (2 C.)
3 tsp. vanilla
1 C. chopped pecans, optiona

Directions:
Directions:
Sift first 8 ingredients together in a large bowl. Beat eggs; add sugar, oil, pumpkin, and vanilla. Stir into dry ingredients and mix well. Stir in chopped pecans. Pour into 3 greased and floured loaf pans. Bake at 325 degrees for 1 hour or until tests done (do not bake too brown). A very moist bread.
