As always add enough ingredients for the amount of servings you want.
Olive oil
Several potatoes cut into small pieces
***Note:Can substitute 1 can of Sliced White Potatoes or hash browns if in a hurry or in a pinch***
Sausage links or loose and/or bacon and/or scrapple, etc
Onion [fresh or frozen]
Green / red/ yellow peppers [fresh or frozen]
Mushrooms [optional]
2 or 3 eggs
Milk
Cheese [ varieties as desired - shredded or cut up cheddar, swiss, Havarti, mozzarella, brie, etc]
Spices as desired [pepper, BBQ spice, Old Bay, Italian, etc]

***Cook sausage and/or bacon and/or scrapple separately***
Heat oil in medium sized skillet on medium low heat on stove
Add onions, mushrooms and peppers
***Note: Cut up tomatoes, avocados and/or asparagus can be added as well***
Add potatoes and spices
Cut up cooked sausage and/or bacon and add to mixture
Cook several minutes turning occasionally
In a bowl scramble eggs and milk together
Add eggs mixture directly over potatoes
Let cook untouched over medium low heat for several minutes
Add cheese, pepper
Stir a little to let all of the eggs cook
Mixture is finished when the eggs are cooked and cheese is melted.
Let stand for a minute or two and serve
