˝ tsp. Pepper
4 Cups Pinquito Beans (Dry)
1 Envelope Chili Mix
1 Medium Onion Diced
2 Cloves Garlic Minced
˝ lbs. Bacon Diced
˝ lbs. Ground Beef
˝ tsp. Pepper
2-4 tsp. Salt
˝ tsp. Oregano
1 ˝ Cup Tomato Juice

Directions:

Wash beans get rid of dark ones, dirt and stones. Cover Beans generously with water, Bring to Boil and add salt and pepper. Turn Heat to simmer and cook two hours or until tender, drain and retain juice. (Beans may be soaked overnight to reduce cooking time). OR just soften them in an INSTA-POT
Sauté bacon, garlic, seasonings, chili mix, tomato juice and ground beef.
Add mixture to beans and simmer one hour (at least).

Hints:
Beans may take three days to get tender. (Unless you soften them in the “Insta Pot”)

• Beans can cook a lot longer if desired. Add retained “bean” water or more tomato juice to keep it just right.
• Add heat (cayenne pepper) as desired more or less of anything as it suits you. (Hey - it’s your beans!)
