Ingredients: 2 c. Flour 4 t. Baking Powder 4 t. Sugar 1/2 t. Salt 2 Eggs 2 3/4 - 3 c. Milk
Cut in half if you are making them for two.

Directions:Sift together flour, baking powder, sugar, and salt. Add 2 eggs and stir while adding 2 ¾ cups of milk. Add more milk if needed. Make sure the griddle is good and hot. I like to melt butter on the pan before I pour on the mix. Wait until the middle is bubbly and the edges are somewhat solid, then flip. |

Notes: Mom always talks about how Grandpa Hyde would make breakfast for them. He liked to make pancakes. This is his pancake recipe. I have wonderful memories of mom making pancakes in cold winter mornings. She would pour them into animal shapes. Grandma Gregg always made 'silver dollar' pancakes. We would have them for breakfast with bacon and coffee when we spent the night at her house. Kelly and I were caught off guard when we had supper with Christina and her family in Denmark. There pancakes are served as dessert with ice cream, chocolate, jam, or whatever your heart's desire. There is nothing that conjures memories more than pancakes with the ones you love. Add a few blueberries if you like. If you are making pancakes for two cut it in half. They are perfect every time.
