1 bunch Swiss chard
1 onion
2 to 3 cloves garlic
4 ounces Parmigiano-Reggiano cheese, grated on the large holes
1 loaf sourdough bread, stale and cubed

Wash Swiss chard thoroughly. Clean the chard and separate the leaves from the stems. Cut stems into 1-inch pieces. Reserve leaves. Roughly chop the onions and garlic. Sauté the onions, garlic, and chard stems in olive oil over medium heat for 15 minutes, or until the onions are white and the stems are beginning to soften.

Meanwhile, slice Swiss chard leaves into large ribbons. Add leaves to the pan and cook covered for 15 to 20 minutes until leaves are wilted and stems are tender. Let mixture cool. Chop mixture finely.

In a large bowl, moisten bread with water. With your hands, squeeze bread to break them into tiny pieces. Mix in chard and Parmigiano-Reggiano cheese. Season to taste with pepper.

Bake at 350°F for 30 to 45 minutes in a casserole dish.

All quantities of the ingredients are suggested. This stuffing should be made to taste. Sauté a small patty to test. Feel free to substitute kale or other leafy greens. Cube some of the Parmigiano-Reggiano to create pockets of cheesy goodness, if desired.
