2 ripe bananas
1 ½ cups sugar
2 eggs
½ cup oil
1 ¾ cups flour
1 teaspoon baking soda
½ teaspoon salt
¼ plus 1 tablespoon buttermilk
1 teaspoon vanilla
1 cup chopped nuts

Directions:
Directions:
Preheat oven to 325°F.

In a large bowl, mash bananas. Beat in sugar, eggs, and oil. Sift together flour, baking soda, and salt. Mix into batter with remaining ingredients. Pour into a greased 9 by 5-inch loaf pan.

Bake 80 to 90 minutes, until golden brown and the top splits. Cool on a rack for 20 minutes before removing from pan.
