8 ounces fresh spinach (or 10 ounces frozen)
1 onion, chopped
1 clove garlic, minced
1 tablespoons oil
1 tablespoon butter
1 pound lean ground beef
½ teaspoon dried basil
¼ teaspoon dried marjoram
1 teaspoon salt
¼ teaspoon pepper
4 to 5 eggs, lightly beaten

Fill a large saucepan half full of water, add a big pinch of salt, and bring to a boil over high heat. Add the spinach and simmer until wilted, about 30 seconds. Drain, rinse under cold water, and squeeze out the excess moisture. If using, frozen spinach, thaw and squeeze out excess moisture. Chop coarsely and set aside.

In a large frying pan, heat the oil and butter over medium heat. Sauté the onion and garlic until soft. Add the beef and cook, stirring, until browned. Sprinkle with basil, marjoram, salt, and pepper. Stir in spinach. Keeping heat high, add eggs to the skillet, stirring constantly and lifting with a metal spatula until eggs are cooked. Serve immediately.
