⅓ C shortening
1 beaten egg
½ C enriched flour
⅓ C sugar
1¼ C milk
4 tsp baking powder
1½ C corn meal

Preheat over to 425º.

Cream shortening and sugar; added and milk. Add flour sifted with baking powder. Add corn meal, stirring ONLY enough to mix.

Fill greased muffin pans ⅔ full. Bake for 25 minutes.

I add about 2-3 Tablespoons butter.
My mother started using this recipe in 1961. She found it in a Better Homes & Gardens Cookbook and modified it slightly.
