Ingredients:  
6 oz. dry noodles (brown rice, pad thai style rice noodles, soba noodles, or linguini would work)
4 cups cabbage, carrots, radish, shredded or grades
1 red bell pepper, finely slices
3 scallions, sliced
1/2 bunch cilantro, chopped (or substitute basil and mint)
1 T or less of jalapeno, finely chopped
1/4 to 1/2 cup roasted, crushed peanuts for garnish

Thai Peanut Sauce
3 thin slices ginger- cut across the grain
1 fat clove of garlic
1/4 cup peanut butter or almond butter
1 orange or (1/4 cup orange juice)
2 medium lime (3 T lime juice)
2 T soy sauce
3 T honey or agave
3 T toasted sesame oil
1/2 to 1 tsp. cayenne pepper (or squirt of sriracha)
1/2 tsp. salt

Directions:
Cook pasta or noodles according to directions on package. Drain and chill under running water. In the meantime, blend the peanut sauce ingredients together in blender until smooth. Place shredded veggies, bell pepper, scallions, cilantro and jalapeno in a bowl. Toss Add the cold noodles to the bowl and toss again. Pour the peanut sauce over top and toss well to combine. Taste, adjust the salt and serve, garnishing with roasted peanuts and cilantro and a lime wedge.
