½ cup oil
4 medium onions, diced
4 medium garlic cloves, minced
16 pints ripe tomatoes (about 65 medium)
2-12 oz. cans tomato paste
¼ cup sugar
¼ cup parsley, chopped (or 2 tbsps. flakes)
2 tbsps. oregano
2 tsps. basil
¾ tsp. crushed pepper
2 bay leaves
3 tbsps. salt

Mix all ingredients together in 12 quart Dutch oven and simmer on medium heat for 3 hours. In hot salad oil, cook onion and garlic until tender, stirring frequently, about 10 minutes. Add tomatoes and remaining ingredients in 12 quart Dutch oven and bring to a boil. Reduce heat to medium, partially cover and simmer for 3 hours. Remove bay leaves and press through a sieve. Fill hot jars and seal.
