16 oz. carrots, peeled
1/2 c. raisins
1/3 c. mayonnaise
1 - 1½ T. granulated sugar
½ tsp. salt
Freshly ground black pepper, to taste, optional

Directions:
Directions:
Grate carrots in food processor or on coarsest side of hand grater to make 2 cups. Toss in large bowl with raisins, mayonaise, sugar, salt and pepper. Refrigerate at least 1 hour until serving time. Stir well before serving.
