juice of one lemon
1/4 cup chopped fresh mint leaves
3 Tbsp olive oil, plus more for oiling the grill
1/4 tsp salt
1/2 tsp freshly ground black pepper
8 ounces Halloumi cheese cut into 1 1/2 inch dice
1 large orange bell pepper
1 large red bell pepper
2 medium zucchini 1/2 inch slices
1 pint cherry tomatoes

1. In a large bowl combine the lemon juice, mint, 3 Tbsp oilive oil, sale and pepper and stir to mix. Add the cheese, peppers, zucchini and tomatoes and toss to coat. Let marinate for 20 minutes

2. Meanwhile soach 8 bamboo skewers in water. Preheat grill to high and brush th egrate lightly with oil.

3. Thread the cheese and vegetables onto the skewers, dividing equally and alternating ingredients so that you have some of each vegetable and the cheese on each skewer.

4. Grill the skewers on the hot grill, turning every few minutes until the vegetables are softened and the cheese and vegetables begin to brown in places, about 12 minutes total.

Can be served with flatbread heated on the grill.
