4 stripes of thick sliced bacon, diced...
3/4 cup diced red bell pepper...
1/2 cup diced onion...
1/4 cup dry sherry...
4 cups fresh or frozen corn...
1 cup heavy cream...
1 T Tabasco sauce...
Salt and pepper, to taste...
1/2 cup thinly sliced scallions...

Directions:
Directions:
Sauté bacon in large skillet, pour off all but 1 of bacon grease...
Add the red bell pepper and onion to the drippings and cook over medium heat until both are soft, about 5 minutes...
Deglaze skillet with the Sherry, simmer until most of the liquid is absorbed, scrapping bottom of skillet for the bits bacon...
Stir in corn, heavy cream, and Tabasco, simmer until thickened, about 4 minutes...
Season with salt and pepper, then stir in scallions....
Enjoy!
