5 lb. potatoes, peeled and diced
3 eggs, hard boiled and chopped
1 T. celery seed
1 C. mayonnaise (approximate measurement; adjust as needed for creaminess)
2 T. mustard
1/4 C to 1/2 C. sweet pickle relish
1 t. salt

Boil diced potatoes until semi soft. Don't overcook the potatoes as they will turn to mush. Drain, and cool completely. Once cooled, add all remaining ingredients and mix well. Chill.

WARNING: This recipe comes from watching both Nannie and Mom make it over and over again. There is no written version that I have been able to find. The taste comes close, but, as with every other recipe, it's just never exactly the same. The only difference I ever noticed between Nannie's version and Mom's version was that Nannie diced her potatoes very small (Mom's were larger), and Nannie used more mustard and celery seed.
