Ingredients: 2 packages frozen Ore Ida Hash Browns 1 can Cream of Mushroom Soup 1 can Cream of Chicken Soup 16 oz. sour cream 4 cups shredded sharp cheddar cheese 1 pound bacon ½ cup milk ¼ cup olive oil or butter (melted) 1 T. garlic salt 2 T. onion powder 1 t. black pepper

Directions:In a large bowl, combine all ingredients except bacon. Mix well, and put in large baking pan(s) as necessary to accommodate all of the mixture. Lay strips of uncooked bacon across the top of the mixture in all pans. Preheat oven to 350º. Bake for approximately 45 minutes or until bacon is cooked through and the top of the mixture begins to lightly brown. |

Notes: As a long-time fan of Cracker Barrel restaurants, I used to love their hash brown casserole. I decided to try to duplicate the taste, but I also wanted to come up with a more creamy consistency. A little bit of trial and error … and voila … a family favorite was born!
