4 plum tomatoes, seeded and chopped
½ cup shredded parmesan cheese
¼ cup fresh basil, minced
3 tbsps. olive oil
2 tbsps. fresh parsley, minced
3 garlic cloves, minced
2 tbsps. balsamic vinegar
⅛ tsp. salt
⅛ tsp. crushed pepper flakes
⅛ tsp. pepper
1 French bread baguette, cut into ½" slices
¼ cup butter, softened
8 oz. fresh mozzarella cheese, sliced

Directions:
Directions:
Combine first 10 ingredients. Spread baguette slices with butter, top with cheese. Place on ungreased baking sheets. Broil 3" - 4" from heat for 3-5 minutes until cheese is melted. With a slotted spoon, top each slice with a tablespoon tomato mixture.
