1 lb fresh cod fillets
1/3 cup Parmesan cheese
2 Tbsp butter
3 tbsp flour
3 tbsp cornmeal
1/4 tsp onion salt
1/4 tsp white pepper

Directions:
Directions:
1. Combine flour, cornmeal & spices

2. Melt butter in shallow baking dish

3. Dredge cod in flour mixture, place each piece in the baking dish & turn cod to coat with butter

4. Sprinkle top side with Parmesan cheese

5. Bake at 450 degrees for 10 min or until cod flakes easily when tested with a fork

Great with any white fleshed fish. Polenta can be substituted for the cornmeal.
