White Sauce:
4 Tbsp oleo/butter
4 Tbsp flour
1 cup whole milk
1/4 tsp dry mustard
*cayenne, if desired
1/2 tsp salt
1/8 tsp pepper

1 cup shredded cheese
3 beaten egg yolks
3 egg whites
1/4 tsp cream of tartar

White Sauce:
1. Melt butter, stir in flour & SLOWLY add milk
2. Stir and cook until very thick
3. Add mustard, salt & pepper

1. Stir 1 cup shredded cheese to white sauce & remove from heat
2. Stir in 3 beaten egg yolks
3. Beat 3 egg whites with cream of tartar
4. fold white sauce into egg whites
5. Turn into a large casserole and set casserole in a pan of water
6. Bake in preheated oven at 350 degrees for 50-60 min.
