1 (9") deep dish pie crust
2 Tbsp olive oil
3 cloves garlic-diced
1 small red onion-diced
1 (16 oz) bag baby spinach, patted dry and chopped
1/2 lb. fresh mushrooms, cleaned and chopped
1 (8 oz) pkg feta cheese-crumbled
8 oz shredded cheddar cheese
4 eggs-beaten
1 c whole milk
salt & pepper

1. preheat oven to 375 degrees (190C)
2. In a large skillet over medium heat, saute garlic and onion in olive oil until onion is translucent
3. Stir in spinach and mushrooms & cook until spinach is wilted-drain
4. Remove from heat and add the feta, 2 oz cheddar cheese and season with salt & pepper-spoon mixture into pie crust
5. In a medium bowl, Wisk eggs, then add milk and season with salt & pepper
6. Pour egg mixture into the pastry shell-thoroughly combining egg and spinach mixtures-Bake in preheated oven for 15 min.
7. Sprinkle top with remaining cheddar cheese and bake an additional 35-40 min. or until center is set
8. Let cool 10 min. before serving or refrigerate over night and serve at room temperature
