1 tsp. granulated sugar
¼ cup warm water
1 - 8g pkg. active dry yeast
1½ cups warm water
4½ cups all purpose flour
½ tsp. salt
1 egg white (large)
1 tbsp. water
coarse salt
sesame seeds

Directions:
Directions:
Stir sugar into ¼ cup warm water, sprinkle yeast over top, dissolve yeast and let stand 10 minutes. Combine 1½ cups warm water, flour and salt in large bowl. Add yeast mixture and more flour if needed. Turn out onto floured surface. Knead 8 to 10 minutes until smooth and elastic. Place in greased bowl, grease top. Cover with tea towel. Let stand in oven with light on and door closed for 45 minutes until doubled in bulk. Punch down. Roll into log. Cut into 12 portions and roll each portion into ½" rope and shape into pretzel on greased baking sheets. Beat egg white and water with fork and brush over pretzels. Sprinkle with coarse salt or sesame seeds. Bake 450ºF for 15 minutes.
