4 portions Smoked cod fillets
3 large potatoes
2 cups carrot coins
3 tbsp butter
3 tbsp flour
1 cup milk
¼ tsp salt
⅛ tsp pepper
⅛ tsp nutmeg

Directions:
Directions:
Boil potatoes and carrots in separate pots. Mash potatoes. Steam cod fillets in ½ inch of water in a pan. Make a white sauce in a small pot by melting butter and fully incorporating flour, then add a little milk while stirring and then add the rest of the milk and whisk. Cook until thickened. Season with salt and pepper and a pinch of ground nutmeg. Pour white sauce over everything on a plate.

This is a favourite supper of mine that our Mom, Esther Rickard used to make. I like to use fresh grated nutmeg.
