3 to 4 inch long carrots washed

Brine:
(makes 10 to 12 pints)
9 cups water
3 cups cider vinegar
3/4 cup pickling salt
1/4 tsp alum

Spices per pint
2 jalapeno peppers quartered
1 tsp crushed chili peppers
2 tsp pickling spice
1 head fresh dill
3 toes garlic sliced

Directions:

1. Put spices in hot clean jars and pack with carrots.
2. In a sauce pan combine the brine ingredients, and bring to a boil. Make sure the salt is dissolved.
Pour the brine into each jar filling up to within 1/2 inch to the top and seal.
Let stand and season at least 2 months before using.
