For the Cake:
1 pkg white cake mix
1 pkg (3.4 oz) instant pistachio pudding mix
1 c. lemon-lime soda
1 c. vegetable oil
3 eggs
1 c. chopped walnuts
For the Frosting:
1½ c. cold milk
1 pkg (3.4 oz) instant pistachio pudding mix
1 carton (8 oz) frozen whipped topping, thawed
½ c. chopped pistachios
Whole red shell pistachios and fresh mint, optional

Directions:
Directions:
In a mixing bowl, combine the first five ingredients. Beat on medium speed for 2 mins; stir in walnuts. Pour into a greased 13x9x2 baking pan. Bake at 350º for 45-50 mins or until toothpick inserted near the center comes out clean. Cool on a wire rack.
For frosting, in a mixing bowl, beat milk and pudding mix on low speed for 2 mins. Fold in the whipped topping. Spread over the cake. Sprinkle with chopped pistachios. Refrigerate for about 30 mins before cutting. Garnish with whole pistachios and mint if desired.
