Ingredients:  
1 head of escarole cut into bite size pieces
2 tbsp. olive oil
2 cloves garlic, minced
˝ tsp red chile flakes
1 cup chicken or vegetable broth (or water)
1 can cannelloni beans
Grated cheese

Directions:
Directions:
1. Clean and rinse greens (Escarole), they are very dirty and sandy.
2. In a large pot heat oil and garlic and sauté 1 min.
3. Add greens, salt/pepper, chili flakes and broth. Simmer 5 min or until greens wilt.
4. Add beans and simmer 20 min. Add more broth/water if necessary.
5. Check seasoning and add grated cheese.
6. Enjoy with Italian bread.
