1 and 1/2 cups sugar
1/2 cup butter (1 stick) melted
2 eggs, beaten
2 teaspoons cinnamon
1 pinch of salt
2 teaspoons vanilla
2 cups flour
2 level teaspoons baking soda
4 cups peeled and diced apples (McIntosh or Rome) I’ve used others and it turned out well
1 cup chopped pecans
1 cup raisins

Directions:

Preheat oven to 350 degrees. Grease and flour a 13” x 9” pan.

Mix all the dry ingredients in a large bowl. Combine the wet ingredients in a separate bowl. Add the wet ingredients to the dry ingredients. Add the chopped apples and pecans and stir. Will be rather difficult because it will feel like it’s not wet enough. Just keep stirring, making sure all the dry ingredients are moistened, then spread into the prepared pan. Pat mixture down gently. Bake for about 40 - 45 minutes. Serve warm or cold. Great with vanilla ice cream or whipped cream. Makes a great breakfast dish!
