1 and 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 - 1/2 teaspoon ground nutmeg (1/4th teaspoon is very subtle)
1/2 cup butter (1 stick) melted
3 large eggs
1 cup plus 2 Tablespoons sugar
1 teaspoon pure vanilla extract
1 teaspoon lemon extract
Grated zest of one fresh lemon
1 six-ounce carton of LEMON yogurt (not the light kind)

Preheat oven to 350 degrees. Grease and flour (or spray with Pam or another vegetable spray) a 9” x 5” loaf pan.

Combine the flour, baking powder, salt and nutmeg In bowl and whisk.

In another bowl, combine the melted butter, eggs, sugar, vanilla extract, lemon extract, lemon zest and lemon yogurt. Pour the yogurt mixture into dry mixture. Combine gently but well. Pour the mixture into the prepared loaf pan. Bake for about 45 - 50 minutes. Toothpick in center of loaf should come out clean. Cool on rack for about 5 - 10 minutes. If desired, make an icing of powdered sugar and fresh lemon juice and drizzle over warm bread.
