2 cups sugar
2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 eggs, beaten
2 tsp. vanilla
4 cups shredded green apples (4 1/2 average apples)
3/4 cups pecans
Directions:
Directions:
Combine all ingredients EXCEPT apples and pecans; mix well. Stir in apples and pecans. Pour into greased and floured 9x13 pan. Bake at 350 degrees for 40 to 45 minutes or until cake tests done. While warm, sprinkle cake with confectioners sugar.

Note: This is a moist cake that does not dry out quickly
