Ingredients: 3 cups all-purpose flour 2 cups mashed bananas 1 cup chopped pecans or English walnuts 3 eggs, beaten 1 eight ounce can crushed pineapple, drained 1 cup vegetable oil 2 cups sugar (sweet bread - you could reduce the sugar some if you’d like) 1 teaspoon cinnamon 1 teaspoon soda 1 teaspoon salt 2 teaspoons vanilla

Directions:Preheat oven to 350 degrees. Grease and flour two large loaf pans.
Place sugar, beaten eggs, drained pineapple and vanilla in a large bowl. Gently stir to blend. Place flour in another bowl and to it add the other DRY ingredients. Whisk together. Add the dry mixture to the sugar mixture, then add bananas, oil and nuts - stirring just until well moistened. Do not beat or stir heavily. Pour combined mixture into prepared pans. Bake for about 1 hour. Test at 50 minutes - depends on oven and width of pans. Cool ten minutes before removing from pans. Enjoy! |

Notes: Years ago, I worked with a nurse who brought this bread to every special function. We all begged for the recipe but she refused to share. She promised if she ever left, she would give us the recipe. That day finally came and she shared the recipe with us. We hated to see her go but we were happy at last to have the recipe for this scrumptious bread! This was long before the days of internet and google!
