½ cup shortening
½ cup butter softened
½ cup firmly packed light brown sugar
¼ cup sugar
1 egg, well beaten
1½ t. vanilla extract
1 package (9-ounce) Borden None Such Classic Original Condensed Mincemeat
2½ cups all-purpose flour
1 t. baking powder
½ t. salt

Directions:
Directions:
Cream shortening, butter, and sugar until light and fluffy.
Add egg and vanilla, beating well.
Break mincemeat into small pieces and stir into creamed mixture.
Sift together flour, baking powder, and salt and add to creamed mixture, blending well. Chill at least 2 hrs.
Preheat oven to 400º.
Shape dough into walnut-size balls and place on a lightly greased cookie sheet.
Gently press each cookie flat with the bottom of a glass. Bake at 400º for 5 to 8 minutes or until lightly browned.
Remove from cookie sheet at once and cool on a wire rack.
