5 lb. potatoes
1 lb. bacon, chopped and fried
Vinegar
2-3 bunches of endive (chicory) - Choose endive with white to yellow stems

Directions:
Directions:
Peel and boil potatoes

Cut off green tops of endive. Chop the rest of the endive and add to the potatoes.

Add the bacon and grease to the top of the endive and mix with the potatoes.

Deglaze the bacon pan with the vinegar and pour over the potato mixture.

Mix and add salt, pepper, and vinegar to taste.

Serve with fried pork chops and apple sauce.
