1 lg. eggplant
1 lg. onion
Oregano
Parsley
1 lb. hamburger
1 tsp. salt
Garlic
Pepper
Tomatoes or tomato soup
Directions:
Directions:
Peel eggplant and cut into 1/4" slices. Place in cold water. Soak for 10 min, then rain and add salt and pepper.

Finely chop onion and parsley and add to hamburger and form into patties.

In a baking dish, layer eggplant and a layer of patties. After ??, add tomatoes or tomato soup and bake in a moderate oven for 1 hour.

Test at the 1/2 hour and the 1 hour.

Use a cheddar cheese topping.

I use med. stewed tomatoes + 2 small tomato sauce + 2 Tbl. or 1/ C brown sugar to sauce.
